Dominant Soil Type: Composed of black volcanic stones and pumice (lightweight volcanic rock). Characterized as “sandy, low in organic matter and nitrogen, with minimal clay and almost negligible CaCo3 content.”

Vinification/Aging:

The gentle winemaking process involved using a vertical mechanical press to extract only the first-press juice. This was followed by fermentation and aging on fine lees for 6 months, enhancing the aromatic potential and flavor duration.

Organoleptic Characteristics:

The color is a pale straw-gold. The nose presents an explosive bouquet of citrus aromas, including citron-lemon, orange, and bitter orange e.t.c.
There are also notes of night-blooming jasmine. On the palate, the wine offers a robust flavor with a rich texture, perfectly balanced by its refreshing acidity, leading to a long, intense, lemony aftertaste, resulting in a well-rounded wine.
