Producer Description

Category: Protected Designation of Origin Santorini (PDO Santorini), Dry White
Varietals: 100% Assyrtiko.
Dominant Soil Type: Composed of black volcanic stones and pumice (lightweight volcanic rock). Characterized as “sandy, low in organic matter and nitrogen, with minimal clay and almost negligible CaCo3 content.”
Vine Age: Over 30 years
Yield per Hectare: 100-150 kg/ac.
Alcohol Content: 13.5% vol.
Aging Potential: 5-8 years
Serving Temperature: 11-13°C
Harvest Date: Mid-August

Vinification/Aging:

Selected grapes from specific vineyards on the southwestern part of the island were vinified carefully.
The free-run must was directed to fermentation at low temperatures.
During the post-fermentation phase, half of the wine was transferred to clay amphorae for maturation, while the other half matured in stainless steel tanks.
In both cases, maturation took place in the presence of fine lees, with periodic stirring, for approximately 12 months, which maximized the wine’s structure and flavor persistence.

Organoleptic Characteristics:

The color is straw-gold. The nose presents a bouquet dominated by citrus fruit such as citron and bitter orange, along with herbal notes that enrich its aromatic character.
On the palate, there is an intense expression of minerality, the signature of Santorini’s unique terroir. Robust taste, rich texture, ideally combined with refreshing acidity, leading to a long, intense lemony finish, resulting in a complete and well-balanced wine.
